This meal is roasted squash, skin and all, and a lovely fresh salad on top. The squash is cut into slices, sprinkled with olive oil, salt, pepper and cinnamon, then roasted for about 45 mins.

The salad is dressed with a homemade dressing, so in all the whole meal took very little time to prepare and is super healthy.
