Banana Pecan Muffin Recipe

  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup sugar
  • 1/4 melted butter
  • 1 egg, slightly beaten
  • 2 medium bananas
  • 4 tablespoons milk
  • 4 tablespoons maple syrup
  • 1 cup pecans


Heat oven to 375.* Mix together, flour, baking soda, baking powder and sugar. In a large bowl, combine the melted butter, egg, bananas, milk and maple syrup. Stir banana mixture into flour mixture, add pecans. Spoon batter into muffin tray or paper muffin cups. Bake 20 minutes, or until the muffins are lightly browned. Makes 12 muffins.
