This salad was great for dinner as it was quite a hot evening, well, quite a ‘warm’ evening really. But it felt hot as the day had been sunny. Can you tell I’m wishing for summer to hurry on its way? The noodles and sausage (vegan, no piggies in here) were lightly fried in olive oil and added to salad greens from up the road. Tossed in olive oil and apple cider vinegar, a truly simple meal.
