This was dinner tonight. The kids and I sat down together as hubby was still at work. We had mixed greens from a local organic farm called Henry Reed Farm, cucumber and a simple dressing. Then on top was supposed to be a veggie burger…ahem, not looking too much like a patty eh? The recipe didn’t stick together, so I told the kids it was veggie burger bits. Luckily it tasted better than it looked! We gobbled it down, especially because there was rhubarb crumble for dessert.
I got the rhubarb from the same organic farm as the salad greens. My rhubarb is not big enough to pick yet, but it’s getting there. This crumble has no sugar in it – What, a rhubarb crumble with no sugar in it, that would be too sour – I hear you cry. I used agave nectar and it tasted wonderful. I had to fight the kids off so they’d leave some for their poor dad.
